Ingredients:1 lb Ground Chicken (Preferably white and dark meat)1 Cup Panko                        BreadcrumbsSalt/Pepper1/2 Cup Grated Carrots1/2 Cup Grated CeleryFresh Parsley2 Tsp Dried Dill2 Tsp Onion Powder2 Tsp Dried Chives1/2 Tsp Garlic Powder1 EggPre-Made Buffalo                SauceRanch Dressing Blue Cheese Crumbles                                                                                     
Daniela: We have here a pound of ground chicken. Certainly use any kind of ground chicken you like, but I know Bill has a certain way he likes his chicken ground.   Bill: Yeah, the key to this meatball is to use breast and thigh. So when you go to the butcher as him for a little thigh meat. It keeps the meat moist and you really get that chickeny-type taste that you're looking for.   Daniela: Okay, so to the meat we're going to add half a tablespoon of salt. We're going to season the meat first. We're going to put just a little bit of ground pepper, about a quarter of a tablespoon of fresh, ground pepper. We're going to take a teaspoon, actually two teaspoons, of dried dill. A tablespoon of oregano. A tablespoon of dried basil. We're going to take two teaspoons of onion powder. You really want to use a small pinch, maybe about a quarter of a teaspoon of garlic powder. We're going to add our fresh ingredients.   Bill: So moving on to this side, we have some chopped carrots.   Daniela: Grated.  Bill: Grated carrots, I'm sorry.   Daniela: When we make out meatballs and we put the vegetables in not cooked, we tend to grate it. It just cooks really well in the oven and it makes for a nice texture of the meatball.   Bill: Then we're going to add our chopped celery...  Daniela: Grated  Bill: Grated celery. Again, we've got that beautiful color plus it will keep your meatballs moist.  Daniela: And you can just add it to the food processor, pulse it for a little while. We're going to take our herbs, so we're going to take about a quarter cup of fresh parsley and about a quarter cup of fresh, chopped chives. You also can substitute dried chives if you like but the fresh is always a nice flavor to have. We're going to put in a cup of our panko breadcrumbs.  Bill: A cup, a cup per pound, its always cheap. And our egg. And again, one egg per pound gets the best results. Then here we'll mix it together.   Daniela: You want to mix it?  Bill: Yeah.   Daniela: You want to mix it together? No?  Bill: No. We do too many things together as it is.   Daniela: That's true. While Bill mixes that, expertly mixes that, I am going to take out our sheet pan. We've lined it with parchment paper. This is a great way to save yourself from a lot of scrubbing. So Bill's going to mix that together and you want to mix just until everything's incorporated. You don't want to over mix it because you don't want the meat to get tough. He's going to form the meatballs. At Bill's Balls, we always make our meatballs three and a half ounces because we like them big at Bill's Balls.   Bill: Big and juicy.  Daniela: Big and juicy! So Bill's going to put our meatballs on the baking sheet. You're going to preheat your oven to 325 degrees and you're going to cook your meatballs, depending on your oven, anywhere between 25 to 35 minutes. But the best way to tell if they're done is to get yourself a thermometer and you want to cook until the internal temperature of the meat, especially for chicken and any other poultry that you're cooking, reads 165 degrees. You're going to drizzle it with a little bit of olive oil, this helps brown the meatballs. And then I'm going to put them in the oven.   That's what they look like when they come out of the oven. Its okay if the top gets a little brown, that's what you want. It makes it nice and crispy on the outside. So now we're going to dress it. Today we're going to make these into meatball sliders.   Bill: Take the buffalo sauce, put it in a little container, here. What I'm going to do is I'm going to roll the meatballs in it so you get that color. You don't want to overdo the sauce because it'll take away from the chicken. The key to the buffalo sauce also,  is to let it cool before you dress your meatball because what will happen is if its too hot it will break up and that's not so nice.  Daniela: So never let your buffalo sauce get too hot.   Bill: I'll plate this. Always use the flat end so it stands up nice, it has a nice presentation. Your game day tradition in a meatball. 











Achieve Success

You’ve been working down in the boiler room for so long that you may not even remember WHY.
If you examined every single person in the world who is considered a failure (especially by themselves), you would see that all their lives lack the same ingredient: purpose.
They don’t know where they are going. They don’t know why they do the things they do and don’t think there can be a reason. They chase only short-term satisfactions like food or sex, and those are the only things that keep them moving.
They are operating only out of the animal side of themselves. Thus, they are not able to practice long-term thinking or personal analysis as human beings can.
There is no need to look at very clear cases of failure to find the disease of lack of purpose. If you are not constantly aware, you will find yourself in the middle of doing something and won’t know why you are doing it.
Momentum can be a good friend, but is also one of those friends that will make you waste a ton of time if you don’t keep an eye on it.
Every time you start an action, keep in mind that you are going to keep on doing it for the rest of your life. Unless, of course, something internal or external reminds you to start doing something else.
When you start working on something without clearly knowing the expected results, it may take you hours or days of hard work to realize that it isn’t what you should be doing, if you ever want to achieve your goals.
Don’t be a busy, hard-working person. Be a hard-planning person who takes purposeful actions instead.
2. Self-work
Work on yourself 10 times as hard as you work on external elements, and you will feel that you are moving 10 times faster towards what you want.
Almost all the hard work you have to do to succeed is focused on replacing your routines and habits with the ones a successful person would have. By deliberately changing your procedures, you change the results you achieve, the value you provide, and the way you are seen by yourself and the rest of the world.
If you could perform the same training and habits as Bruce Lee, day after day, there is no doubt that you would sooner or later become a remarkable martial artist, right?
And what about performing like a person whose success in business has been outstanding? What if you integrated the same routines and habits that have allowed others to unlock the power and creativity they needed to succeed in their career or life?
You could, literally, start performing like that today and get astounding results immediately.
The only requirement is that you put your old habits and self-limiting beliefs aside, making space for new ones.
You must look at them before you can let them go; if you don’t recognize the weeds amongst the flowers, you won’t be able to take them out.
Success is not attained by fighting the old, but by letting it go and building the new in its place.
3. Belief
If you don’t believe it’s possible for you to achieve what you want, you can work day and night, but you will never succeed.
Sometimes, all the distance that seems to be separating you from your goals is in your mind. If you removed those mental barriers, you would see that you could just reach out and grab what you’ve been pursuing for so long.
As long as you don’t believe that it’s possible for you to have it, you are going to keep creating excuses and distractions. That’s simply because it feels uncomfortable or scary to have something you don’t think you are ready to have, or become someone you don’t believe you can be.
If you removed the negative beliefs about what YOU can have and become, your reality would change instantly.
Conclusion
I know that these three things also require hard work and focus, but the stress, frustration and hours of pushing and shoveling they may save you are priceless.

There is a new trend in town. Every company needs one. Interns have become the latest fad in Irish business as companies cut costs in these challenging times.

What "Value" are you offering your Intern?

In theory it seems like a super idea to take on a qualified graduate or student and offer them real life work experience. They gain valuable experience to put on their cv and bolster their chances of securing paid employment. Companies gain a skilled additional staff member at little or no cost.  Seems like a real win win experience, but is it really?

I am meeting many disgruntled interns who feel that they are being exploited by companies. They believe they are been given the “horrid” jobs that no one else wants to do. The other main complaint is the lack of support and training that they are receiving during their internship.
I am also talking to many companies who are hiring interns as a substitute to permanent staff as they do not have the money to take on a new staff member…


Many of these businesses are short staffed and under financial strain and do not have the time or resources to train, nurture and develop their intern. This is a recipe for disaster and discontentment. I would suggest that if you are a company that is too busy to add value and training to your intern then you should not consider taking one on.

Very often the expectations of the company are very different to that of the intern.  Many companies take on interns without ever knowing what the intern’s expectations or objectives are.

Prior to hiring an intern I would suggest the following:

Clear objectives and expectations for the company and intern are addressed.
Ensure that you are prepared to invest ample time to train and develop your intern’s skills.
Make sure you give them work that will challenge them and not just the work that no one else wants.
Include your staff members in the decision to take on an intern. They need to be on board too. Often staff members are left to train interns and this can cause friction.
Make sure that you have the time to meet your intern at the end of every week to celebrate the highs and identify any areas that require special attention the following week.  Interns will excel with praise and structure.

1. Your overspending habit
This is a sticky subject because we are already part of a culture that does not like to talk about money. So many married people are spending, mindlessly, and their spouse has no idea what is going on. To build generational wealth, there has to be open communication. Even if the money your are spending is money you earned through the work you do, there is a serious problem if you feel the need to keep your expenses a secret.
2. Unprocessed childhood pain.
I know that sharing every detail of your childhood may be difficult and unnecessary, however, if something happened to you years ago and the pain from it is still impacting your life in a meaningful way, your spouse needs to know that. Knowing your spouse is hurt and having no idea why can damage a marriage, because at some point you start to wonder if you are the source of the pain, even if that pain existed long before you came along.
3. Friendships you have.
If you have a friendship, whether it’s with the same s*x or the opposite s*x, there is something strange going on if that friendship needs to be a secret. Examine why you are truly keeping it a secret and you are sure to reveal something with your marriage that needs to be addressed.
4. Your vision for your life.
If you dream of a life that is different than the one you are living, but you find yourself trying to be content with what you have because having more seems unreasonable, you have to talk to your spouse today. Nothing hurts a marriage more than dying dreams and feelings of resentment. Keeping your personal vision a secret will hurt in the long run.
5. What you do with your free time.
We are all entitled to free time. Spending time apart is needed for any healthy relationship. However, your time apart shouldn’t be spent doing things other than what you say you’ll be doing. If your husband thinks you are out shopping with your girls, you shouldn’t really be at a bar drinking by yourself. Or if your wife thinks you went to a football game with your boys, you shouldn’t really be at the casino gambling away your check. When you keep secrets about your whereabouts, there are deeper personal and marital issues you need to work though.
Being truthful all the time is hard stuff, but keeping a ton of secrets is ultimately much harder.

When you think of leaders and leadership what or who do you think about? For many it is Barack Obama, Nelson Mandella or maybe Richard Branson, or even Michael O’Leary…for me it is my mother first and foremost.

I was asked the question some months ago at a training event and that is the answer I gave.  You should have seen the strange looks!  You too might think me a little strange for saying that but here’s the thing: she has been at the helm of our family for the last 50 years (though I haven’t been around quite that long!!).  She has lead the move from country to country, house to house.  She has instilled in us a desire to achieve and to be our best.  She has encouraged and motivated us and yes, quite frequently she has delivered her no-nonsense “constructive criticism” and “negative feedback”.

She has taught us by example.  She has rolled-up her sleeves and got stuck in to help us out when we needed it.  She has given us responsibility and made us accountable for our actions.  She has listened to us and given her advice and support.  She has helped us to set goals and given us direction. She has allowed us to grow and to make our own mistakes and has encouraged us to think for ourselves and to seek our own solutions. She has inspired us!

To me, these are all the things that encompass a great leader and they are what leadership means to me – what does it mean to you?

Cruciferous Vegetables
The cruciferous vegetable family are rich in beta-carotene, lutein, zeaxanthin, folate, minerals, and C, E, and K vitamins. Turmeric is an Indian spice with one of its main ingredients being curcumin. It has been shown to slow down tumor cell proliferation, decrease inflammation, slow down the transformation of cancer cells from normal cells to tumor cells, help the body destroy cancer cells that have mutated so they can’t spread through the body, and also keep additional blood supplies from forming that support cancer cell growth.
Fish
When cancer patients are diagnosed, their survival rates are shown to be better when they have higher Vitamin D levels than normal. Cancer patients with higher Vitamin D levels also remain in remission for longer than cancer patients who are deficient in Vitamin D, according to a new study. Vitamin D is acquired when exposed to sunlight, from food, and from supplements. Fish such as salmon are at the top of this list when it comes to foods that contain Vitamin D.
Green Tea
There is some evidence that green tea may be effective in destroying cancer cells, though that is not to say that it will prevent cancer. Green tea has a biological agent that changes the metabolism of some cancer cells. A cell needs to be able to metabolize to continue to grow and multiply and when it can’t, it dies.

Leadership, or the lack thereof, has been receiving a lot of attention over the past year but, let’s face it, it’s a fairly woolly topic.  There’s as many definitions of Leadership as there are people.  Personally, I define leadership as the ability to look forward and clearly see the future you want for your organisation, to communicate this throughout the organisation and to enable people to achieve it.

Of course, notwithstanding differences of opinion, the definition is the easiest part.  How does one actually develop themselves sufficiently to become a Leader?  With a lot of hard work – but, in the meantime, here are three key elements that good leaders develop over time:

Self-Awareness: A good leader has a very honest understanding and appreciation of who they are and what makes them tick.  They are  relatively consistent in both their behaviour and their message and are seldom swayed by the current breeze blowing e.g., they don’t keep changing their minds or take the most expedient route (because it’s easy).

Excellent Communication: Communication is made up of 3 main elements – listening, body language and asking questions.  As the saying goes, a good leader will listen and speak in the same proportion as their mouth and ears i.e., listen twice as much as they speak.  For most people, listening was not a God-given gift so, start practicing your listening skills today.

Combining Self-Awareness and Communication, another aspect of communication is the old chestnut – Actions Speak Louder than Words.  A good leader really understands that people will place way, way, way more emphasis on their actions than what they actually say.  So many Managers seem to think it’s enough to say the words and that people will accept them.  People don’t, they look for the credibility that comes with matching the actions to the words.

Take Time to Reflect: If you’re going to have a vision of the future, it makes sense that you take some time out of the day-to-day and consider what you’re trying to do.  This is not a particularly easy thing to do.  Most people are so busy with the every-day that they don’t have  time to consider the need to step back, let alone do it.

However, it’s important to schedule in time to reflect.  Put it in the diary, go somewhere quiet and start asking yourself questions such as “what am I (we) doing?”, “what am I (we) doing this for?”, “what do I (we) want to be doing?”, “will I (we) achieve that by what I (we) am currently doing?”

Being a leader takes a huge amount of energy and effort, and it can be a lonely place at times, but wouldn’t turning a dream into reality be worth it?  Answers on a postcard, or at least your thoughts in the comments section…
