Easy-peasy ice cream

This ‘ice cream’ is easily customised to your own tastes. Use different fruits, top with dark chocolate, nuts or even some passionfruit seeds. Have a great idea or combination? Tell us below! You can easily get 8 portions of this easy ice cream, especially if served in pretty espresso cups! If making 8 servings, these beauties rack up less than 90 calories!

You’ll need :

  • 500g greek or natural yoghurt
  • Frozen raspberries (can sub any frozen berries)
  • Honey (2-3 tbs)
  • White chocolate shavings (25g)

Method

  1. Blend the frozen berries in a food processor for 1 min ( I always take mine out of the freezer around 20 minutes before I’m going to use them to soften the berries a little).
  2. Add in the yoghurt and honey, and blend to a smooth consistency
  3. Add your ice cream to glasses, pots or bowls. You can pop them in the fridge to set a little, or enjoy straight away. Sprinkle the white chocolate shavings over the top and indulge.

Sweet potato brownies

Do not knock these until you try them! They taste like real, gooey, chocolately brownies - without the worry. I like to sprinkle some icing sugar over the top and serve with fresh (or frozen & thawed) fruit. Beautiful! Now, the calories here depend on how big you like your brownie! As I like to enjoy something sweet everyday, I cut these into 20 little bites. Bigger brownies will mean more calories! 20 bites come in just under 100 calories each.

You’ll need :

  • 1 medium sweet potato
  • 2 eggs
  • 2 tsp vanilla extract
  • 170g honey
  • 90 mls extra virgin olive oil
  • ¼ tbs baking soda
  • 1 tbs baking powder
  • 60g cocoa powder
  • 50g spelt / coconut flour

Method

  1. Peel the skin off the sweet potato and grate using the large side of a box grater.
  2. Add this to a food processor with the eggs, vanilla, honey and olive oil and mix together until smooth.
  3. Add in all other ingredients and combine.
  4. Add to an oven proof dish and cook for 25 minutes at 185 degrees.
  5. Remove from the oven and allow to cool before cutting into squares
